Cultivate food & beverage business management talents for Nantou tourism industry.
     
     Taiwan is known for its delicious cuisine, and the demand for quality food and beverage continues to increase along the growing number of tourist in Taiwan. Nantou County is located in central Taiwan. With its mild climate and rich culture, Nantou has developed its own distinctive F&B culture. Nantou is one of the major tourism areas in Taiwan, it attracts millions of tourists each year, and the number of tourists is still growing. Our F&B Management Department was therefore developed to aid the development of local distinctive F&B and expand the scope of F&B service, so as to strengthen local government’s development for tourism and to increase the number of F&B talents for the growing demand from tourism.
 
☆ Reduce the loss of F&B beginners in central area and prevent the waste of educational resource.
      
      By the end of 2011, around 2,000 F&B students graduate from the high schools and vocational schools in the central area each year. However, only few colleges in the central area has F&B related departments. Most of the F&B students are therefore forced to enter other departments, which is devastating for the career plan of these students and is a huge waste of educational resource.
        Tourism and leisure activity industry development is one of the major focuses of our country in these years. As the tourism market continues to grow, we consider the establishment of this department is a necessity to offer an education institute for F&B students graduated from vocational schools and high schools to learn advanced F&B making and management.
 
☆Focus on local market demand to integrate the college’s resources and develop mid/long-term strategy for cultivating F&B management talents for local tourism.
      
      As the only university of technology in Nantou, NKUT has been the most important place to cultivate numerous successful professionals over the last four decades. In response to government policies, NKUT has made “tourism” an important development subject while developing local features. Ever since Taiwan opened to China tourists, the Sun Moon Lake has been an attractive tourist spot. There is a huge number of tourists visiting the lake. The F&B Management Department in our school is what locals and tourism professionals in Nantou expect the most. At the same time, the department is a practice of our social responsibility at current stage.
      
 
Objectives
 
    The purpose of establishing the F&B Management Department is cultivating people with good culinary skills, creative ideas, and cultural sense to become professionals in F&B management. Meanwhile, the development in F&B management and creative culinary arts are the two main major objectives. We expect our students to be equipped with knowledge that covers professional F&B management and service management and the ability to create innovative ideas related to F&B. The major objectives include:

1. To develop students’ F&B skills and service management knowledge and improve their competitiveness on the market.

2. To develop students’ culinary skills to make creative dishes with local characteristics and healthy dishes. At the same time, to teach them the principal of creating a friendly environment and aggressive learning attitude. In the end, they will be able to work dependently while cooperating with others.
3. To build up a systematic training program for the purpose of building up students’ correct integrity and creativity
 
 
Features
 
The purpose of our establishment is to develop students’ ability of making healthy, creative cuisine. By doing so, they would be able to make innovative dishes and running F&B business. Therefore, the features of our college include:
 
1. To provide situational teach to meet the needs of local businesses::to use the spade and provide situation teaching. Together with our other professional courses and culinary courses to make cuisines with local features, students would be able to learn from doing and improve their learning experiences.
 
2. Step-by-step with full equipment: :with the fully equipped facility and course design, our department offers all kinds of courses and examination according to students’ interest and career plan. Also we work closely with College of Extension Education of NKUT to set-up another path for obtaining licenses.
 
3. Implementation of national on-job education and cooperation with corporates to boost the innovation of local F&B market: :periodic participation or host for national F&B competition, enhance students’ standard with enriched course content, and the preparation for setting-up a local F&B supporting and consulting center for the development of local F&B and tourism, which aims to work closely with government authorities and related associations to host all kinds of professional training, lecture, and examination.
